Ugly Breakfast Muffins

3/4 C. whole wheat flour
3/4 C. unbleached all-purpose flour
3/4 C. Wheat Montana 7-grain cereal mix (or steel cut oats)
3/4 C. ground flax seed meal

2 t. baking soda
1 t. baking powder
1 t. salt
2 t. ground cinnamon
3/4 C. milk
2 eggs, lightly beaten
1 t. vanilla
1 C. brown sugar
1 1/2 C. grated carrots
2 medium apples, chopped
1 8 oz. can crushed pineapple, drained
3/4 C. raisins
1 C. chopped walnuts

Heat oven to 350 F. Grease muffin pans or line with paper liners.

In large bowl, mix flour, flax seed, oats, baking soda, baking powder, salt and cinnamon. Add milk, eggs, vanilla and oil; mix until just blended. Stir in milk, eggs and vanilla. Fold in all other ingredients. Batter will NOT look like muffin batter--don't panic. Fill muffin cups mostly full.

Bake 15 minutes.

Makes 24 very ugly muffins.
